"I used to think I was gluten intolerant. I ultimately discovered that it wasn’t the gluten that was making me feel bad, but the sugar “fructan” in modern yeast leavened bread. There is no fructan in sourdough products because the sourdough starter eats the fructan that otherwise is in the dough. If you have non-celiac gluten intolerance, you may want to try and test out eating sourdough and see if you still have symptoms... Oh they are open late on Fridays that's the best!!"
